Eggs, flour, milk and cheese, cheese, cheese! What’s not to love? It goes together in a flash, into the oven and wait…it’s the longest 30 minutes you may ever spend! This may be THE perfect brunch recipe. It’s incredible, as it is. But, you can garnish is with some salsa (on the side, please), snipped fresh herbs—chives, cilantro, tarragon, parsley are all delicious options. Or you could add crumbled bacon or diced ham to the mixture, but first, before you do any of those options, experience this, as is.
Bear in mind…this is all about the cheeses you use. And, it’s a great way to get rid of those little bits of cheese that everyone has…they accumulate and we save them, because, you know, we’ll find something to do with them. Well, this is it! And that variety makes for a better tasting dish. You definitely want some sharp cheese, but a slightly sweet cheese, is a nice foil for that sharpness. I have never used any bleu cheese, but I think it would be delicious with some Monterey Jack, scallions and maybe a little bacon…mmmm!
It’s simple–You’ll need a large bowl.
Drop in the eggs, whisk them up; add the milk and whisk again. Dump in the flour; whisk. Then toss in everything else and stir until it’s just combined. Pour into a well-buttered (or spray with cooking spray) pie dish and into the oven. Bake for about 25 minutes, but don’t over-bake.
It will be a lovely golden brown. Let it stand for about 10 minutes. Then, slice and serve!
Gooey, Cheesy Brunch Pie
- 2 jumbo or 3 large eggs
- 1 cup whole milk (you may use 2%, but whole milk is best)
- 1 cup all-purpose flour
- 1 cup shredded cup mozzarella/provolone combo
- 3/4 cup shredded sharp cheddar cheese
- 1/2 cup shredded Swiss, Fontina or Gouda
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon kosher salt (you may need more at the table)
- 1/8-1/2 teaspoon cayenne pepper (or Aleppo, ancho or guajillo powder)
Preheat oven to 400°F. Spray a 9-inch pie plate, baking dish or skillet, with cooking spray; set aside.
In a medium bowl, whisk the eggs until light. Add milk and whisk for 30 seconds. Add the flour and whisk until well combined. Dump in all of the cheeses, along with the salt pepper and cayenne. At this point, I use a spatula to combine the mixture. Pour mixture into the prepared baking dish.
Bake until golden brown and a knife inserted into the center comes out clean, about 30-35 minutes. Remove from the oven; let stand for 5 minutes before cutting and serving.
NOTE: You may sprinkle with finely snipped chives, parsley or cilantro, if desired…or serve with a nice dollop of salsa. But it’s a fine mixture, as is!
