So we had Vietnamese-Flavored Meatloaf on Friday, and it’s hot today, so perfect day to satisfy my Banh Mi craving.  But, I decided to lighten it up a bit and make a wrap, instead of a sandwich…and I didn’t have the bread, but I did have flour tortillas.  Continue reading →

avocado, bell peppers, Black beans, cilantro, green olives, lime juice, olive oil, pineapple, roasted garlic, Scallions, Spices, sweet potato, vegetable oil

This salad is good at any time of the year.  It is a great summer salad, as no mayo, but it also is lovely in the autumn, when the leaves turn about the same color as the salad.  Make it the day ahead and chill it overnight.  But, it’s best eaten at room temperature.  Add some red chile flakes for a little heat, when the thermometer dips.  Continue reading →

Sushi Bowl (or Deconstructed Sushi)I was thinking about making sushi, but just didn’t get myself organized enough to manage that.  This is sushi, but “unrolled” or deconstructed—layers of flavor.  This is fork food.  Chopsticks won’t work too well here, but the flavors are deliciously sushi.  Continue reading →

Touch-of-Spring CevicheWith the heat of summer around the corner, and sort of already here in South Florida, (though it is raining today) I decided it was time to make ceviche.  Ceviche is probably the quintessential summer (read “hot weather”) dish.  But, the thing is, it is barely springtime, so I thought some spring fruit might be a nice addition.  Maybe even some diced sugar snap peas or asparagus…. Chicken Enchilada Crêpes with Cilantro-Lime Cream SauceThis is a savory option for our crêpes.  It’s pretty much a chicken enchilada, but with crêpes, duh.  The sauce is lovely and loaded with flavor.  Even though it has heavy cream, using broth lightens the sauce.  Continue reading →
