Most people I know enjoy scalloped potatoes, or pommes au gratin.  They are creamy, cheesy and a great company dish.  Sometimes, The Goddess, thinks less, is more.  She want to really taste the potatoes, cut the richness (steak or duck doesn’t really need extra richness, do they?) and still have a comforting, delicious, make-ahead side dish…this is the solution. We’ve done Eggplant Parmesan Soup, lo those many years ago, when we began this little adventure.  I loved that version, but as you must be sick to death of hearing, The Goddess is a Being who enjoys change…and it just so happens she had some really nice fennel, ergo this version was born! Don’t purchase pre-made poultry season.  Homemade is less expensive, it’s head-and-shoulders above the purchased stuff and it’s easy-peasy to do.  I thought I would pass along my current version of poultry seasoning.  I use this for fried chicken, all chicken really, as well as turkey.  It has evolved over the years and will probably continue to evolve.  That’s how I cook.  Our tastes change and so should our recipes.  Continue reading →

Creamy Russian DressingRussian dressing?  No.  This is really more of a spread or dip.  It’s this creamy version that absolutely makes a perfect Reuben sandwich.  I love Reuben sandwiches.  I think they are my favorite grilled sandwich and largely it’s because of a good, thick schmear of this little bit of heaven.  This is pretty decent on a burger and it absolutely makes a roast beef sandwich.  Oh, yeah…you can actually dress a salad, with it too! Four-In-One, Quick Thanksgiving TurkeySpatchcock?  Or not spatchcock?  That is the question.  It’s such fun to say “spatchcock”…go ahead, say it over and over.  Turns out, it’s a great way to save time cooking your turkey, too.  I have done this with a twenty pounder, but today, it’s a smaller twelve pounder.  Then, place your different types of seasoning on each quarter for four different flavors, because variety is truly the spice of life!
