Summer Delight Tuna Pasta Salad

ball parke mustard, bell pepper, bread and butter pickles, canned tuna, Celery, cherry tomatoes, fresh herbs, frozen peas, jicama, lemon juice, lemon zest, mayonnaise, olives, pickle brine, raw pasta, Scallions, sour cream, Spices, sweet vinaigrette

This is a throw-back to my childhood.  On hot summer days (we didn’t have air-condition!), when my mother didn’t want to heat up the kitchen, she would make this in the morning, and put it in the fridge.  At dinner time, she would add it to chopped iceberg lettuce, along with thawed frozen peas.  It was so very good, at the end of a hot day.  Continue reading →

This is a quick-fix dinner for Cinco de Mayo.  If you have leftover chicken from Sunday dinner, like the Brazilian Bakery Sunday Chicken, then you’re set.  If not, purchase one of those broasted chickens from the supermarket.  This is a perfect patio dinner on a hot summer day.  Continue reading →

The Goddess loves rhubarb.  It’s tart, yet sweet.  It’s a vegetable, but we treat it more like a fruit.  It’s old-fashioned and delicious.  And it makes a fabulous pie, crisp or this lovely little concoction. Continue reading →

Mojo Verde (Green Sauce)This is similar to The Goddess’s Green Goddess, in that it’s creamy and green!  The herbs are entirely different, so the flavor is different.  But, delicious?  Oh, yeah.  This is terrific to dress a potato or pasta salad, smear on a chicken sandwich and it is wonderful on a nice green salad with bacon bits.  But, The Goddess loves, loves, loves to dip roasted baby potatoes into this fine elixir…heaven!  Pure heaven! Chicken Salad, Brazilian-StyleThe Brazilians add corn to things.  We don’t usually add corn to our hot dogs, but they do…Yup, hot dogs.  As well as, those yummy little potato sticks.  So, this is different, but it is a wonderful version of chicken salad.  It’s creamy, has a nice pure flavor, a little crunch at the end.  It’s just flat-out delicious.  Continue reading →
