One Layer Chocolate-Cherry Cake

One Layer Chocolate-Cherry CakeThe Goddess likes cake.  Yes, she does.  She doesn’t have much of a sweet tooth, but chocolate cake is so good for breakfast.  This recipe is a riff on that old Peg Bracken cake from her “I Hate to Cook” cookbook.  In her recipe, you mix the cake right in the pan you’re going to bake it in.  It was a drop-dead easy recipe and had such a good flavor, so naturally The Goddess tossed in some bing cherries…naturally.  Continue reading →

Oma's Sauerkraut with Apple, Onion and BaconDid you have a nice Thanksgiving?  We were blessed with a visit from our good Canadian friends, The Austrian Sweet Tooth and The Organizer, Now Retired (she’s my political conscience!).  They were visiting to “experience” the “Southern” Thanksgiving, as they have never been with us for Thanksgiving, American-style, and a “Southern” Thanksgiving, as well.  We didn’t do the traditional turkey, but feasted on Pork Tenderloin with Mushrooms, Herbs and Apples, Bread Stuffing with Herbs, Scalloped Corn and sauerkraut.  Sauerkraut is just so delicious with pork, so why not?  And this…this is some gooood sauerkraut!  Continue reading →

Cassata with Ricotta-Mascarpone Filling with RaspberriesCassata is a wonderful dessert.  It’s perhaps, sponge cake at its very best.  Brush on some Lemoncello®, smear on a ricotta-mascarpone filling and serve with a wonderfully fresh, macerated fruit compote and YUM!  There’s just one other thing…this has to be made ahead, which makes it the perfect dinner party dessert.
