Quick Shrimp-Tomato and Herb SauceAn unknown, but clearly intelligent and resourceful person, once said, “necessity is the mother of invention”.  I think this is particularly true when it comes to the culinary world.  Many of what are now famous dishes, Spanish tortilla, Italian frittata, stir-fry’s, anything that’s a one-dish dinner, spring from necessity.  And, this is just such a recipe.  Continue reading →

This image has an empty alt attribute; its file name is img_3539.jpgSicilian cooking is really fusion cooking.  The Moors were in Sicily in the 10th and 11th centuries, and they brought all kinds of good things, like, apricots, sugar, citrus, sweet melons, rice, saffron, raisins, nutmeg, clove, pepper, pine nuts and cinnamon.  This recipe is sort of an homage to the Moorish presence. We’ve done Eggplant Parmesan Soup, lo those many years ago, when we began this little adventure.  I loved that version, but as you must be sick to death of hearing, The Goddess is a Being who enjoys change…and it just so happens she had some really nice fennel, ergo this version was born! Spice Island Chicken with Sweet Potatoes, Onions and Nectarines

As you know, The Goddess loves fruit with savory things.  The spices are the “warm” spices—allspice, coriander, smoked paprika.  And nectarines.  There isn’t much that’s better than a juicy, ripe nectarine, eaten out of hand, with the juices running down your chin.  God, I need a cigarette, just thinking about it.  This dish combines the sweetness of nectarines, sweet potatoes and juicy chicken thighs seasoned with those “warm” spices, all in one pan.    Continue reading →
