This image has an empty alt attribute; its file name is img_3539.jpgSicilian cooking is really fusion cooking.  The Moors were in Sicily in the 10th and 11th centuries, and they brought all kinds of good things, like, apricots, sugar, citrus, sweet melons, rice, saffron, raisins, nutmeg, clove, pepper, pine nuts and cinnamon.  This recipe is sort of an homage to the Moorish presence. This is a summer salad.  Yes, it can be made anytime of the year, but when the cucumbers and tomatoes are in season, it’s spectacular.  It’s a nice picnic or BBQ side, too.  And as always, it’s very flexible.  But, no matter what options you choose, it’s delicious.  Continue reading →

We traveled North for the holidays.  it’s a bit chillier there than in the Carolinas, but decidedly more Christmas-y.  This soup/chowder came about through the wonderful duo, Dave and Terri!  They always come up with delicious fare and this was truly an inspiring way to ring in the New Year.  Continue reading →

Saffron Scented Chicken Curry with Chickpeas in Coconut Cream SauceThough The Goddess tends toward being heavy-handed with garnishes on curry, this chicken curry has a very subtle curry flavor.  The flavors intermingle and literally “bounce” around your palate, but the “curry flavor” is a back flavor.  And, this curry is fast enough for a mid-week family meal and tasty enough for company.  Either way, it’s delicious.  Continue reading →

Caponata is incredibly delicious.  It is the perfect end-of-the-summer-garden dish to prepare.  This version “twisted” or “evolved”, as I was searching through the garden.  Only it’s roots are traditional.  Then it wanders.  And it wanders into pretty, delicious territory.  Continue reading →

You know I adore eggplant.  I don’t think I’ve ever met an eggplant dish I didn’t love.  I’ve been thinking about stuffed eggplant, so I decided that today was the day.  I was heading down the vegetarian path, adding lentils to give us that meaty texture.  Then, I took another path…. What?  Has The Goddess been smoking herbs again?  You might think that, but this came to be because she forgot to make pizza dough.  And anyway, this is pretty much pizza, cooked in an oven-to-table pan, finished in the oven and served with good Italian bread to scoop up all that yumminess.  So, it’s pizza, without a crust.  Continue reading →

avocado, bell peppers, Black beans, cilantro, green olives, lime juice, olive oil, pineapple, roasted garlic, Scallions, Spices, sweet potato, vegetable oil

This salad is good at any time of the year.  It is a great summer salad, as no mayo, but it also is lovely in the autumn, when the leaves turn about the same color as the salad.  Make it the day ahead and chill it overnight.  But, it’s best eaten at room temperature.  Add some red chile flakes for a little heat, when the thermometer dips.  Continue reading →
