This is a nice little sauce to have on hand. It’s positively delicious with fish of any kind, but it’s decent with chicken fingers, Fried Calamari or drizzled over pork. You can vary the fruit, but I love this combination.
This is a stir together sauce. Put everything in a small bowl; stir together until completely combined. Set aside for at least 30 minutes. Stir before serving. This is excellent with Fried Calamari or pretty much anything. And I do mean anything. This is just plain yummy.
Thai-Pineapple Chile Sauce
- 2-3 tablespoons finely minced fresh pineapple
- 2 tablespoons finely minced fresh mango
- 1 teaspoon very, very finely minced lemongrass (I use frozen)
- 1/2 teaspoon pressed garlic
- 3/4 cup Thai chili sauce
Place ingredients in a small bowl; stir to combine. Cover tightly and store in the fridge until you’re ready to use, at least 30 minutes. Keeps at least 1 week in the fridge.
