This is a nice little change of pace from Not-Quite-Classic Creamy Coleslaw.  But, I think you’ll find this to be a surprisingly delicious change of pace.  A change of pace is good….This goes together in a flash and is particularly a nice surprise with grilled pork or beef.  It’s stupid simple…cabbage, scallions, celery heart and blueberries in one bowl and tossed together.  The dressing ingredients in a second bowl, combine and pour over the salad.  Toss to combined thoroughly.  I like to add the bleu cheese separately and then toss again.  But, feel free to add it to the dressing.  That’s it.  And, as you can see from the picture, I don’t always follow my own instructions…I just mixed it all together in one bowl…that works, too.

I do like to make it a bit ahead, so the flavors can run around and meld together.   Mmmm…so good.  Feel free to change the herbs, but personally, I like the addition of that little bit of fresh mint…it goes very well with the blueberries.  Feel free to double or triple this and I do usually add the large amount of blueberries.  Diced peaches or nectarines are a delicious addition, but add them just prior to serving.  Enjoy!

I'm-So-Blue Cole Slaw

Diced peaches or nectarines are a delicious addition; add them just prior to serving.

  • 2 cups finely shredded or chopped savoy cabbage
  • 2 scallions, thinly sliced
  • 1/4 cup finely chopped celery heart (mostly leaves)
  • 1/3-1/2 cup blueberries
  • Dressing:
  • 2 tablespoons mayonnaise (light works just fine)
  • Juice of half of a lime (about 2 tablespoons)
  • 1-2 tablespoons honey
  • 2 large pinches kosher salt
  • 1 sprig cilantro, finely minced
  • 2-3 fresh mint leaves or lemon balm, minced (optional)
  • Pinch garlic granules
  • 2-3 tablespoons crumbled bleu cheese

Combine the cabbage, scallions, celery, and blueberries in a bowl.  Toss to combine.  In another bowl combine the dressing ingredients (except the blue cheese); stir well.  Pour over the salad and toss/stir to combine.  Sprinkle on the bleu cheese and toss again.  Chill for a couple of hours to allow the flavors to meld.
