Ham Dip, well that’s what we call it, but it’s really more of a spread than a dip. It has a lovely, smoky, sweet-sharp creamy flavor, rather complex and robust. Vinaigrette is another Mother Sauce made of a simple blend of oil, vinegar, salt and pepper (usually 3 parts oil to 1 part vinegar). More elaborate variations can include any combination of spices, herbs, shallots, onions, mustard, etc.
