Honestly, I really had been thinking about potato soup today. I had leftover mashed potatoes, with just a bit of parsnip in them. This is a perfect situation to make a soup. This concoction of leftover Thanksgiving dinner has been in my life since, well forever. We usually had duck and/or goose for Thanksgiving, sometimes a pork roast, but rarely a turkey. But, we always had stuffing (or dressing) and lots of it!
