Perfect Anytime Scones

Any proper tea will have lovely scones (rhymes with “cons”) which are similar to biscuits, but “shorter”.  This is a reference to texture, not stature.  When you hear the term “short”, it usually applies to non-yeast baked goods that have a high ratio of butter to flour.  They tend to be very rich, crumbly, and tender, and they tend toward crispness rather than chewy.   That describes these lovelies to a “tea”…   Continue reading →

Ginger…Use it Gingerly!

Ginger (Zingiber officinale) use dates back at least 5000 years.  You know the drill, Asia (it’s been used there for centuries), through the Middle East to Europe, then the Arab control of the spice trade, the trade routes open and spices become more available.  The history of spice does seem to repeat itself, doesn’t it?  Fortunately for us, ginger is readily available and in several forms…fresh, dried (in slices, pieces or more readily, ground), in syrup and crystalized.

It was drizzly, and rather chilly today…you may have heard…it’s Spring!  Soup seemed like the perfect antidote to not-so-perfect weather.  This soup has everything green and everything springtime in it.  It’s a flexible soup, too.  You can limit the mixture to 2 or 3 ingredients or expand it 5 or 6.  And if that’s not enough, there are also flavor or seasoning options.    Continue reading →

Mint is an under-utilized herb by most of us and it just screams springtime, with its refreshing taste and gorgeous green color.  We flavor all sorts of things with it, but mint as an herb, is used much less frequently.  If you come from Mediterranean  or Middle Eastern roots or grew up in the Southern US, then you’ve experienced mint.  It’s great with peas, asparagus, lamb, fiddleheads and a whole heap of other things, too.  Afterall where would a mojito or julep be without it? 192This is Venice, in all her glory.  She’s old and she’s beautiful.  Venice is a model of early engineering…well engineering, period.  This is man-made, and the beginnings of Venice date back to about the 5th century!  Isn’t that just astounding?  And the food is pretty astounding, too.  Venetian Chicken (implying this is the only way one would prepare chicken in Venice!) has all of the best aspects of Venetian cuisine, but with a twist!   Continue reading →
