Not Hollandaise Sauce Sauce

No, you didn’t misread that.  This is “almost” hollandaise sauce.  It looks like it.  It tastes like it…so what’s the deal?  Well, no butter!  Yes!  Now you’re asking, why, for the love of all that’s holy in the kitchen, wouldn’t you want butter in a hollandaise sauce?  Let’s face it, hollandaise has to be made last minute…it really does.  It doesn’t reheat well and it’s a bit on the rich side, right?  This has all the really good properties of a real-deal hollandaise sauce, but without the drawbacks…and you can have more without feeling like over-stuffed! Oeufs Mayonnaise (Eggs Cloaked in "Almost Homemade" Mayonnaise)Eggs, garden tomatoes, arugula and cloaked in a light mayonnaise sauce…what could be better to start off a meal?  Or for lunch, with good bread?  I was reminded of this bistro favorite, in an article in The New Yorker, and I’m so very glad it nudged my memory.  This is a delicious way to kick off a summer meal, when the tomatoes are prime and the temperature peaks.  Continue reading →

Deviled Eggs with Bacon Top HatEggs and bacon go together like…well, bacon and eggs!  These are really the basic recipe for deviled eggs.  The garnish is up to you, but we like bacon, a sprinkle of fresh snipped chives and tonight, a thin slice of a cherry tomato.  The Latin Lover will be happy, as he loves deviled eggs.  Continue reading →
