Pan-Fried, Dry-Rubbed Salmon

I love salmon.  It’s pretty and pink-ish, it can take some bold flavors and it’s so quick to fix.  This is an easy, mid-week dinner.  It’s best if the salmon is seasoned ahead; you get a better, more robust flavor.  Salmon is easy and this version is pan-fried, but you can grill it, if you prefer.  We’re using our coffee rub here…it plays to the savory side of the salmon, but because of the frozen orange juice concentrate and the dulce de leche drizzle, there is balance.   Balance is good. 275I’m a bit late getting this to you, but I posted a guacamole recipe a few months back, but today is Cinco de Mayo, which positively screams and dances guac, don’t you think?  So I thought about it a bit and decided to primp up some guac.  A photographer friend says her mother always told her, “Never leave the house without lipstick”.  Who am I to argue with mom?  This is “lipstick guac”.  Continue reading →

016Compound butter, which simply put, is butter with stuff added to it.  The great thing about them, is they can and should be made ahead, chilled and/or frozen, so you have them on hand.  The Goddess is all about having things on hand to work with and make her life easier.  These little nuggets of saucy goodness offer huge flavor and versatility.  It’s simplicity at its very best.  Continue reading →

Ginger…Use it Gingerly!

Ginger (Zingiber officinale) use dates back at least 5000 years.  You know the drill, Asia (it’s been used there for centuries), through the Middle East to Europe, then the Arab control of the spice trade, the trade routes open and spices become more available.  The history of spice does seem to repeat itself, doesn’t it?  Fortunately for us, ginger is readily available and in several forms…fresh, dried (in slices, pieces or more readily, ground), in syrup and crystalized.

143Curry powder isn’t a “thing” unto itself, but rather a blend of spices, used to simulate the masalas widely used in Indian, Asian and some African cuisines.  It is surprisingly flexible, depending on how much you use and what spices you choose to include, but absolutely delicious.  Continue reading →

Allspice…It’s a Berry

105This is Allspice.  Contrary to what many people think, Allspice is not a blend of spices.  From a taste standpoint, you can see where this myth comes from.  It is said to taste like a combination of cinnamon, cloves and nutmeg.  But use it on its own; let allspice carry the day added to some ground lamb or rub it into a pork shoulder, then slow-roast the meat and serve with a BBQ sauce that has…yeah, you guessed it…allspice in it!   Continue reading →
