coffee, dry beef base, garlic granules, hickory smoke powder, onion granules, Spices, sugar

I always have bottle of this rub/seasoning in my cupboard.  With BBQ season just around the corner, this is a must-have.  I usually double the recipe, as I go through it quickly.  It takes a burger and a steak to a heavenly place.  Continue reading →

Who the hell is Dom Pedro you’re asking?  And what does he have to do with pot roast?  The Portuguese-born Dom Pedro I was the first ruler of the Empire of Brazil back in the 19th century.  He has nothing to do with pot roast per se, but here we join together some of the best of both Portuguese and Brazilian flavors, for a winning combination.  Continue reading →

One Layer Chocolate-Cherry CakeThe Goddess likes cake.  Yes, she does.  She doesn’t have much of a sweet tooth, but chocolate cake is so good for breakfast.  This recipe is a riff on that old Peg Bracken cake from her “I Hate to Cook” cookbook.  In her recipe, you mix the cake right in the pan you’re going to bake it in.  It was a drop-dead easy recipe and had such a good flavor, so naturally The Goddess tossed in some bing cherries…naturally.  Continue reading →

Coffee-Brown Sugar Dry Rub
Coffee-Brown Sugar Dry Rub

Coffee and chiles, with brown or maple sugar, make a terrific dry rub meat, particularly pork.  But, I use this on steak and burgers, but it is surprisingly delicious on both lamb and venison.  I haven’t tried in on duck, but I think it would be delicious.  A rubbed-filled jar is a great gift for the foodie in your life.  Continue reading →

038I’m reposting this, because well my God…look at that crust.  And tomorrow is St. Pat’s Day.  And make the Creamy Horseradish-Mustard Sauce today.  It’s a must.  So back to the post…Slow-roasted, brown sugar-crusted corned beef with beer and onion gravy.  Why would you save this just for St. Patrick’s Day?  It’s much too good and so simple to be left to one day a year.  It makes a great Sunday dinner and the house will smell good enough to eat!  Continue reading →

Homemade Taco SeasoningYes, I know you can purchase taco seasoning, but this is incredibly simple to prepare and way more economical.   Sometimes taco seasoning can be too salty for our taste.  But, making your own allows you to control the amount of added salt and you can guarantee that it’s gluten-free!   Continue reading →

Gloriously Glazed PorkGlazes can make a piece of meat or poultry.  Since we’re looking at Easter (and this may work for a Passover lamb, too), I thought I might pass on a couple of simple glaze options for ham, pork or lamb.  Truth be told, these could work well with turkey, too, but you’re on own, as I haven’t tried that…yet!  Continue reading →

Smoked Tea Rub for MeatWe’ve already talked about the spectacularly delicious tea, Lapsang Souchong Oolong.  It’s smoky and makes an interesting cup of tea.  But, I like to use the tea for cooking.  It is just the perfect addition to this simple dry rub for meat.  You can use it on other things, but it positively sings on beef…we’re talking a full-fledged aria.  Continue reading →
