Simple, Simply Delicious Sloppy Joe'sSloppy Joe’s were always my birthday request when I was but a wee one.  I still love them.  My mother made hers with tomato soup, but I tend not to use canned soups…I think it might just be a bit of snobbery on my part, because there really was a reason I asked for them every year.  They were sublimely delicious!  Continue reading →

Mexican Restaurant-Style Salsa

Mexican Restaurant-Style SalsaI love salsa.  I think most people do.  I love it on good tortilla chips.  Good salsa pure, simple, with just the right balance of flavors.  The thing is I’m picky about my salsa.  I don’t like the watery version you get from using fresh tomatoes.  Nor the thick, gloppy version that takes over the whole chip.  Both of these seem to be de rigueur in many jarred, and so-called “fresh” salsas in supermarkets and many restaurants, Mexican or otherwise.  So I decided to do something about it.  Continue reading →

079Gazpacho is the perfect summer soup.  In Andalusia, it’s smooth, unctuous and creamy.  The Goddess loves that version.  She could bathe in that version.  But, she’s also just a tad unconventional, so she also really likes a slightly chunkier version with bits of crunchy vegetables, too.  That’s what this is!  Continue reading →

I love eggplant parm.  I was peeling an eggplant to make it when I realized, that I really should have another one, but it’s cold and I didn’t want to go out to get another eggplant, so then The Goddess improvises.  In the way my mind works, or doesn’t, I thought SOUP!  Anyway, you may have heard that lately soup has been on my mind, so in the words of the late Mr. Spock,  “It is perfectly logical”.  I thought eggplant parmesan in soup-form might work.  I think it did.  Continue reading →
