A Thanksgiving turkey sandwich with slices of sweet mango, a good schmear of Sweet Curry Mayo, is hands-down, no contest, the favorite way The Eldest Progeny likes to have his leftover Thanksgiving turkey. And if a couple of slices of bacon happen to jump on the sandwich, he’ll sacrifice himself. It’s the blend of flavors, I guess. But, I always make a good-sized container of Sweet Curry Mayo for him and his sandwiches.
Fruit relishes are a wonderful way to preserve have the summer flavors on the autumn and winter table. I love these with Thanksgiving turkey and don’t get me started on how good this relish is on a turkey sandwich. Not only that, fruit relishes are relatively easy.
I was going to call this Tropical Cranberry Sauce, but that’s way too vague. And I want you to try this. It uses some of the most wonderful flavors of the Tropics, but still retains a familiarity to the more traditional version.
