Not Hollandaise Sauce Sauce

No, you didn’t misread that.  This is “almost” hollandaise sauce.  It looks like it.  It tastes like it…so what’s the deal?  Well, no butter!  Yes!  Now you’re asking, why, for the love of all that’s holy in the kitchen, wouldn’t you want butter in a hollandaise sauce?  Let’s face it, hollandaise has to be made last minute…it really does.  It doesn’t reheat well and it’s a bit on the rich side, right?  This has all the really good properties of a real-deal hollandaise sauce, but without the drawbacks…and you can have more without feeling like over-stuffed! Baked Chicken with General Tso’s-Orange Sauce

Baked Chicken with General Tso's-Orange SauceThis General Tso’s chicken is different, not the usual take-out variety.  First, the chicken isn’t diced, but left in pieces and then roasted.  Secondly, this really combines General Tso’s sauce with some orange zest and juice, creating the best of both worlds, General Tso’s and Orange chicken.  Both of The Goddess’s favorites, rolled into one lovely dish.  Continue reading →

Quick, Pan-Fried General Tso's ChickenThe Eldest Progeny loves General Tso’s.  Make no mistake here…we all love it.  But, he can be pretty passionate about it.  It’s sort of a benchmark for him, when he considers the quality of a Chinese restaurant.  We’ll see what he thinks about this version, which isn’t deep-fried and is a bit lighter, but loaded with flavor.
