Picadillo is a favorite of The Latin Lover and the Progeny. We like it a bit on the soupier side, because we serve it with or over rice and usually black beans and fried ripe plantains (maduros). So The Goddess decided to throw caution to the wind and combine these flavors. I mean, why not? Continue reading

That’s right…those Cubans even have their own version of a burger…the Frita. This Pastel de Picadillo Cubano is perfect for him. Continue reading

Gong Hey Fat Choy! February 19th is Chinese New Year. It’s the year of the Ram or Goat, so planning ahead, as that’s a good thing (I’m trying to remember this concept; it’s not going as well as I’d hoped), I’m giving you Asian-type recipes this week, so you can plan your own New Year’s feast to celebrate the year of the Ram. This nice brothy soup, with a real melting pot of Asian flavors, is a great place to start. It can be spiced up with chili sauce, served with or without rice noodles and can be made ahead. The little meatballs are poached in the soup broth, rather than baked or fried, making it simple to prepare and almost a one-pot meal. Continue reading

Picadillo is an every day, comfort food sort of dish in most Latin cultures. It’s relatively quick to prepare, can be eaten over rice, rolled into a flour tortilla or served in a corn tortilla, taco-style. It has a rich, meaty essence with sweet-salty flavorings. It can be made with either ground pork, ground beef, or as I’m doing it here, both. The Latin Lover is Cuban-born and he loves picadillo, Continue reading
