This is a quick-fix dinner for Cinco de Mayo.  If you have leftover chicken from Sunday dinner, like the Brazilian Bakery Sunday Chicken, then you’re set.  If not, purchase one of those broasted chickens from the supermarket.  This is a perfect patio dinner on a hot summer day.  Continue reading →

Sweet Potato-Black Bean Salad with Lime-Smoked Paprika Vinaigrette

This salad is good at any time of the year.  It is a great summer salad, as no mayo, but it also is lovely in the autumn, when the leaves turn about the same color as the salad.  Make it the day ahead and chill it overnight.  But, it’s best eaten at room temperature.  Add some red chile flakes for a little heat, when the thermometer dips.  Continue reading →

South-of-the-Border Bean Salad (or Salsa)You’ve heard about Texas Caviar, Cowboy Caviar, Bean Dip or whatever, right?  You  probably make it or at the very least, have eaten it.  This isn’t exactly that…it’s really a riff on my mother’s Three Bean Salad and we could consider it “friends” with my Three Bean Salad with Potatoes and Corn.  What makes this salad different?  It has those lovely Tex-Mex flavors.  I’m not a big fan of beans and rice, but give me a bean salad and I’m there to the very end…of the bowl!  Chips are good, too.  Continue reading →
