Cuban-Style PicadilloEvery Cuban woman (or man, I suppose) knows how to make Picadillo.  It’s quick and delicious, but it’s never as good as “mami makes”!  Some things transcend cultures, don’t they?  I learned how to make this from my mother-in-law and from The Latin Lover’s great-aunt, both damn fine cooks.  It’s a very valuable recipe to have.  Continue reading →

Cuban Ham Dip-UpdatedThe original Cuban Ham Dip is delicious.  It is.  But, it’s evolved.  The Latin Lover likes the evolution.  He thinks it’s even better than the original.  It still has a smoky, sweet-sharp flavor, and it’s still creamy and robust.  But, it’s more complex.  It makes a great sandwich.  Or maybe a Super Bowl slider?  Continue reading →

Empanada Gigantica and Smaller Empanada "Hand Pies"Do you have leftover Picadillo Cubano?  It makes a great filling for empanadas, and I threw a ripe plantain for good measure.  It was (note the past tense!) delicious.  The perfect light supper for The Latin Lover, after his return from the airport.  Yes, he travels a bit, leaving The Goddess to wander and get into all sorts of trouble.  Continue reading →

Cuban-Style Pot Roast, DeconstructedLast year I shared my recipe for one of The Spicy Honey’s favorite dish, Boliche, the Cuban version of pot roast, with cubes of good things stuffed in the middle of it.  This isn’t that.  Boliche is wonderfully tasty; it is using the eye of the round.  But, I have a chuck roast.  So why, The Goddess asked herself, not make pot roast, using the same ingredients, just not stuffed into the hunk of meat?  Continue reading →
