Creamy Corn and Cheese PolentaUnless your roots lie in Italy, polenta may be pretty unfamiliar.  It certainly was for The Goddess.  But, she’s a convert.  This is a great starting place, if you’ve never made polenta.  You can do this and polenta with corn and cheese is just so delicious. Ham & Cheese Filled Crêpe with an Egg Top HatThis is a fun little breakfast or supper dish.  I got this from the folks over at Serious Eats.  Those people are geniuses.  This is a slightly different way of folding the crêpe than we normally see.  But, delicious these are. Continue reading →

Crêpes with Ricotta-Mascarpone Filling & StrawberriesIt’s almost strawberry season.  I’m impatient.  So, I purchase supermarket strawberries, just to get myself in the mood.  They are almost always a disappointment, but oddly enough, even those work reasonably well with this lovely springtime dessert. Cheeseburger & "Fries" CasseroleWho doesn’t love a good cheeseburger?  And nice, crispy fries?  So, The Goddess was thinking this might just work in a casserole.  You know how she’s into these one-dish or skillet dinners.  Many time when she thinks something will work, it doesn’t work as well as it does in her mind’s-eye.  But, this turned out to be incredibly, almost indecently, tasty.    Continue reading →

The Hot Mess Cheeseburger with a Crispy "Collar"I know I’ve said eggs were the perfect food, but burgers are pretty high up on that list, too.  And today is National Cheeseburger Day, so here we have the perfect burger with a crispy, lacy “collar” of cheddar.  This is a serious burger and with crunch! 019You’ve heard The Goddess prattle on about how much she adore leftovers.  She prays at the table of leftovers.  I’m certain it’s gotten to the point where you want to gouge out your eyes and run a red-hot poker through your ears, every time she says that.  But this…this lunch right here…this is why she feels that way…not the gouging or the hot poker part, but the loving leftovers part…. Strawberry Sauce with Pink Peppercorns and Ice CreamI’m guessing that you’re thinking The Goddess has plunged deeply off the edge of the earth, which most rational, sane people can make a case for on any given day anyway.  But you really do have to try this.  It is surprising and surprisingly delicious.  With local berries in season, it’s the perfect time of year for this sauce, which is as good drizzled over grilled chicken as it is over good vanilla ice cream.  Continue reading →

I haven’t made the creamy-type of polenta in years…and I do mean years.  I had forgotten just how good it is and that it’s a nice alternative to mashed potatoes.  It also behaves as a backdrop for other flavors; herbs, spices, garlic, scapes or ramps, and in this case, cheese!  Beautiful, creamy cheese!!    Continue reading →
