“The corn is as high as an elephant’s eye”, so the song goes.  It’s the perfect time to make a little corn relish.  The zucchini are still bearing, the peppers are starting to bear and the corn…oh God, the corn!  It’s so delicious fresh, but it’s nice to have a few jars of corn relish tucked away for later.  Continue reading →

Back in the day when “cracker” was something you ate with soup or put cheese or peanut butter on, my mother used to make this salad.  I had completely forgotten about it.  Of course, there was no recipe that she left behind.  I was dicing a tomato and some scallions, and the memory of it came flooding back.  Thank goodness for food memories. Okay.  Right off I want you to know that The Goddess is misleading you.  Yup.  She’s leading you down the culinary garden path.  She broiled the corn; she has no grill.  And creamy?  There is no cream, either.  But, I’m here to tell you.  This is truly delicious! Continue reading →

Creamed Spinach with Summer Squash and Corn CasseroleThe Goddess loves creamed spinach, but for some reason, she doesn’t make it too frequently.  It’s particularly nice with steak, don’t you think?  Well, she was serving steak with Bleu Cheese Butter and Mocha-Merlot Sauce with Shallots.  So, creamed spinach seemed like a good idea…but then… Continue reading →

Falafel-Coated Snapper with Sautéed Vegetable MélangeI had falafel for lunch last week and I was reminded how much I love that flavor profile.  I also noticed how nice and crispy the exterior was, so The Goddess, having a mind like a steel trap, thought, ‘hmmm…I wonder how a falafel mix would work for coating fish?”  Continue reading →

Creamy Corn and Cheese PolentaUnless your roots lie in Italy, polenta may be pretty unfamiliar.  It certainly was for The Goddess.  But, she’s a convert.  This is a great starting place, if you’ve never made polenta.  You can do this and polenta with corn and cheese is just so delicious. Tuna-Avocado CevicheYesterday The Goddess very pointedly told you not to use oily fish for ceviche.  Clearly, she’s not to be trusted.  Because today, here she is, using tuna in ceviche.  So, it turns out that tuna (and I have used salmon—horrors!) is really quite lovely in ceviche.  Continue reading →
