Spiced, Braised Pork Shoulder with Roasted Pineapple

I know you’re groaning about now…oh, no! More citrus…at least this time it’s lemon. And this is using my favorite, Meyer lemons. The vanilla is surprisingly good in a vinaigrette. We don’t use vanilla enough in savory things. This will change all that! 

This is a really nice side dish for an Asian-inspired dinner. Well, for any dinner, really. I love spring onions. They are like giant scallions, but more onion-y and maybe a bit sweeter. At any rate, they’re darned delicious.
Today we visit Loulé and Almancil, which is really part of Loulé. A suburb, if you will. And as in most towns, villages or cities, it has a castle, a couple actually. Or at least the remnants of a castle. And, of course both places have churches galore. What a surprise!
When the Moors ruled the Algarve for almost 500 years, Silves was the capital of the Algarve. Silves is in the northern part of the Algarve. It is inland, so no beaches here! The 1755 earthquake destroyed most of the buildings, and supposedly only 20 houses were left standing. But, no matter, the vistas from the Castle, are stunning.
I love stuffed peppers. I didn’t always, but the I grew up. And now I do. I love the sweetness of the pepper, after it roasts. I seem to always like whatever is stuffed into them. It always seems to work. And these Papa Rellena Stuffed Peppers…baby, do they ever work!
Faro is the capital of the Algarve. It’s the largest city in the area and it has several points of interest…of course, it has a castle! Or at least the remnants of a castle. And storks! There were several stork nests. They are wonderful birds and the Portuguese sort of revere them, or at the very least don’t remove them from their roofs. Storks also mate for life. Hey, we were celebrating our anniversary, so this is pertinent.
Have you tried plantain chips? They’re readily available here in South Florida, but I’ve gotten them in the Northeast, too. Anyway, you need to get yourself a bag, because they make a great “crumb” coating…really. Crush them up and add use them to coat chicken breasts, or as in this case, fish fillets. Oh yeah, they’re a great alternative to potato chips, too (and they are gluten free, as well!).
