I just ran across a recipe for Chicken Mole Casserole on the Food & Wine website.  And I do mean I “just” found it.  It sounded great; I liked the idea of it.  It just seemed like the perfect thing for dinner, so I made it, or rather my version of it. Risoles (risole is the singular) are one of our best food memories from out time in Brazil.  That’s saying something, because there was no shortage of spectacularly good food.  Risoles are a form of croquette.  They are deep-fried, crispy little bites of heaven.   Or about 2-3 bites, usually with a creamy filling; shrimp, hearts of palm, cheese, etc.  But they are the stuff of dreams.  Continue reading →

Neptune’s Shepherd’s Pie

I was going to call this fish pie, but that seemed misleading; there’s no crust.  And when most people hear “pie” they expect crust.  But most everyone knows that shepherd’s pie is a mixture of meat (in this case, fish) and vegetables topped with mashed potatoes.  And most everyone knows that Neptune was the Roman God of the Sea…hence, Neptune’s Shepherd’s Pie seemed more accurate.  Continue reading →
