"Pickled" Fried ChickenThis was fantastic fried chicken.  Not only does this taste fantastic, but you can use up leftover pickle juice.  Yeah, I know.  Most people simply pour it down the sink, but The Goddess hates waste, so this was the perfect solution.  And it brings back a wonderful childhood memory…my mother’s fried chicken. Cumin-Garlic-Lime Chicken with HoneyThis is perhaps one of The Goddess’s favorite recipes.  She could live on this.  Originally she marinated whole chickens, then she grilled them over indirect heat.  It doesn’t get much better than that.  Continue reading →

First, let’s get something straight.  The Goddess loves chicken salad.  She’s never met one she didn’t like, except for that one with chocolate chips in it.  It turns out that chocolate doesn’t make everything taste better!  Continue reading →

I just ran across a recipe for Chicken Mole Casserole on the Food & Wine website.  And I do mean I “just” found it.  It sounded great; I liked the idea of it.  It just seemed like the perfect thing for dinner, so I made it, or rather my version of it. And it was on the table in 20 minutes!  What a great weeknight or Friday-night-after-work-instead-of-pizza dinner!  Continue reading →

Risoles (risole is the singular) are one of our best food memories from out time in Brazil.  That’s saying something, because there was no shortage of spectacularly good food.  Risoles are a form of croquette.  They are deep-fried, crispy little bites of heaven.   Or about 2-3 bites, usually with a creamy filling; shrimp, hearts of palm, cheese, etc.  But they are the stuff of dreams.  Continue reading →

Almost every Sunday, when we lived in São Paulo, we would walk over to the bakery just down the hill from our apartment, and buy 2 chickens.  Even today, I can almost smell the aroma wafting up from the bakery, more than 15 years later.  They were a memory that was worth trying to recreate.  Continue reading →

Pastel de Pollo Cubano (Cuban Chicken Pie)Cuban Chicken Pie is totally different from what we non-Cubans think of as chicken pie…there’s no cream, no carrots and celery and the crust is totally different, more cake-like, than short and flaky.  This is for The Honorary Gal-Pal and did I mention that it’s delicioso?  Continue reading →

Cuban-Style Roasted ChickenThis is it!  The chicken you won’t be able to stop eating.  You may abandon supermarket-roasted chickens forever!  The flavors are very similar to Lechon Asado from a much earlier post, but it’s the Honey-Lime Drizzle that will make you weak in knees.  Continue reading →

Stuffed Tuscan Chicken Quarters with Mushroom-Shallot Wine Sauce, Tuscan White Beans and Sautéd ZucchiniThis is a lovely entrée for family or a dinner party.  I’ve haven’t done this in years and decided it was thyme…er…time.  The thigh-drumstick combo can be stuffed with a bread stuffing, but I’m using ground chicken with herbs and other good things.  Continue reading →

It’s beautiful, isn’t it? Lavender is much more than a flower and a scent for soap and potpourri. It grows freely and wildly in France, (in my garden and yours, too) and was a subject the Impressionists returned frequently.  And lavender is a lovely spice to grace your table, too.   Continue reading →
