I’m a chewy, fudgy brownie-type of woman. Cake brownies are well, just cake, really. Brownies should be dense and moist and rich. These brownies are all that, but they have the added bonus of coffee and bourbon. We’ll say these are “adult” brownies…I think they’re better the next day, but they’re damn fine, just out of the oven and cooled for maybe 15 minutes, too…damn fine!
You know how The Goddess loves her sauce. This one is a passion. It’s simplicity itself to make. It’s spectacularly flexible and it’s extraordinarily delicious. I’m thinking this will be and incredible glaze for our Thanksgiving turkey.
We love ripe plantains, or as the Cubans call them, “maduros”. Which means, “ripe”. Go figure! Maduros are sweet, rich and just terrific with something savory. This was a true regional fusion and were astoundingly delicious.

Both of my parents long ago left this world for the big farm in the sky. They had a good life, a long life and they were pretty happy people. It doesn’t get too much better than that. Anyway, yesterday would have been my father’s birthday and today would have been my mother’s birthday. So my thoughts turned to pork. In my family, food was much bigger than any gift. It was the gift. And pork was always there.
