This image has an empty alt attribute; its file name is img_6784-e1617219729973.jpgThe folks over at Leite’s Culinaria posted this terrific sounding Banana Bread with Nutella.  Yes.  Nutella.  And I had a jar of Nutella in the cupboard, and several very ripe bananas just waiting for such a recipe.  But…and you knew there would be a “but”, didn’t you?  Because The Goddess can never, ever just leave a recipe alone.  This time, I think you’ll be very happy that she didn’t! Mocha-Bourbon Chewy, Fudgy BrowniesI’m a chewy, fudgy brownie-type of woman.  Cake brownies are well, just cake, really.  Brownies should be dense and moist and rich.  These brownies are all that, but they have the added bonus of coffee and bourbon.  We’ll say these are “adult” brownies…I think they’re better the next day, but they’re damn fine, just out of the oven and cooled for maybe 15 minutes, too…damn fine! Espresso-Maple GlazeYou know how The Goddess loves her sauce.  This one is a passion.  It’s simplicity itself to make.  It’s spectacularly flexible and it’s extraordinarily delicious.  I’m thinking this will be and incredible glaze for our Thanksgiving turkey. Continue reading →

Espresso-Maple Glazed Bacon-Wrapped Ripe PlantainsWe love ripe plantains, or as the Cubans call them, “maduros”.  Which means, “ripe”.  Go figure!  Maduros are sweet, rich and just terrific with something savory.  This was a true regional fusion and were astoundingly delicious.   Continue reading →

Cuban-Style Pot Roast, DeconstructedLast year I shared my recipe for one of The Spicy Honey’s favorite dish, Boliche, the Cuban version of pot roast, with cubes of good things stuffed in the middle of it.  This isn’t that.  Boliche is wonderfully tasty; it is using the eye of the round.  But, I have a chuck roast.  So why, The Goddess asked herself, not make pot roast, using the same ingredients, just not stuffed into the hunk of meat?  Continue reading →

Stuffed Pork Loin with Espresso-Cider GravyBoth of my parents long ago left this world for the big farm in the sky.  They had a good life, a long life and they were pretty happy people.  It doesn’t get too much better than that.  Anyway, yesterday would have been my father’s birthday and today would have been my mother’s birthday.  So my thoughts turned to pork.  In my family, food was much bigger than any gift.  It was the gift.  And pork was always there.  Continue reading →
