Sweet & Spicy Pickled Pineapple ‘Tis the time of year!  This is a great gift from the kitchen, though admittedly The Goddess has been know to plan to give this away, and it never quite makes it out of the kitchen.  So she’s sharing the recipe with you, just in case you don’t receive a jar, now you can make it yourself.  Continue reading →

Pastel de Pollo Cubano (Cuban Chicken Pie)Cuban Chicken Pie is totally different from what we non-Cubans think of as chicken pie…there’s no cream, no carrots and celery and the crust is totally different, more cake-like, than short and flaky.  This is for The Honorary Gal-Pal and did I mention that it’s delicioso?  Continue reading →

Mexican Restaurant-Style SalsaI love salsa.  I think most people do.  I love it on good tortilla chips.  Good salsa pure, simple, with just the right balance of flavors.  The thing is I’m picky about my salsa.  I don’t like the watery version you get from using fresh tomatoes.  Nor the thick, gloppy version that takes over the whole chip.  Both of these seem to be de rigueur in many jarred, and so-called “fresh” salsas in supermarkets and many restaurants, Mexican or otherwise.  So I decided to do something about it.  Continue reading →

Roasted Caulflower with Bleu Cheese and Buffalo SauceBuffalo-Flavored Cauliflower with Bleu Cheese…why didn’t I think of this before?  As you know, The Goddes is trying to divest her fridge of its belongings, and there was this bottle of Frank’s® Hot Sauce that’s been lurking, hiding behind the jars of capers, olives and pickles, right there on the door.  And sitting right there on the shelf was a piece of bleu cheese…you see where she’s going here, right?  Continue reading →

Now that we’re wandering into the Autumn, I’m beginning to think about heartier dishes.  You know, good peasant food.  The Goddess loves the bold, assertive flavors and stick-to-your-ribs quality that peasant food brings to the table.  I think most people like that sort of food…at least the people who come to our table seem to!  Continue reading →

Gazpacho…Soup AND Salad

079Gazpacho is the perfect summer soup.  In Andalusia, it’s smooth, unctuous and creamy.  The Goddess loves that version.  She could bathe in that version.  But, she’s also just a tad unconventional, so she also really likes a slightly chunkier version with bits of crunchy vegetables, too.  That’s what this is!  Continue reading →

Catalan Tomato Bread (Tomaquet)

Today, when I got the first real vine-ripened tomatoes, I knew EXACTLY what to make.  Tomaquet is to Spain, in particular, to the Catalan, what bruschetta is to the Italians.  Ask any Spaniard about tomato bread and they will get a faraway look in their eyes and wax on about tomaquet for, at the very least, 15 minutes.  Continue reading →

019You’ve heard The Goddess prattle on about how much she adore leftovers.  She prays at the table of leftovers.  I’m certain it’s gotten to the point where you want to gouge out your eyes and run a red-hot poker through your ears, every time she says that.  But this…this lunch right here…this is why she feels that way…not the gouging or the hot poker part, but the loving leftovers part…. I must confess, The Goddess has never met an eggplant she hasn’t loved.  I’m afraid it’s true.  And The Latin Lover is okay with it, so don’t worry.  He knows all about it.  This original recipe came from Epicurious and of course, The Goddess made a few little changes.  Continue reading →

….and so it begins.  Summer is such a season of abundance.  The garden over-produces and you’re looking at a counter laden with all these lovely vegetables.  You’ve fried, you’ve grilled, you’ve eaten them raw, you’ve steamed them, you’ve added them to stir-fry’s.  Hell, you’ve given them away to anyone that will take them—strangers on the street, the kid who mows your lawn, you’ve left them in the mail boxes of people you don’t even know.  It’s gotten to the point where the neighbors are closing their blinds at the mere sight of your car on the street.  Continue reading →
