The Eldest Progeny made this for dinner. He uses it as both a salad and a condiment. It’s really simplicity itself, as most wonderful things tend to be.
I adore ensalada rusa, or Russian Potato Salad. When we were in Spain, I ate every version I could find and no two were exactly the same. Isn’t that what makes cooking and dining interesting? This version, which contains beets, if both beautiful and refreshing.
This is one of those lovely concoctions that’s so refreshing you want to eat the whole bowl yourself (don’t think I haven’t done that once or twice!). It is as beautiful as it is delicious, and nutritious, too. What’s not to love?
I’ve decided to inundate you with slaws…I’m loving them, so I feel the need to force feed them to you! This one is beautiful, very holiday-looking, and is particularly nice in winter. It drowns out the grey, days of dreariness with its vivid colors and it just tastes great!
Slaws are underrated, in The Goddess’s ever so humble opinion. I think perhaps we think they are too ordinary, which is too bad. They don’t have to be. Explore your inner, creative side and slaw away!
I love chicken salad. And I imagine you are pretty sick and tired of hearing about what The Goddess loves, as it seems to be everything, doesn’t it? What can I say? She’s an open-minded eater and a culinary adventurer. Damn, that sounds much better than reality, because she’s pretty much willing to try anything at least once. But, chicken salad is a never-to-be-passed-up dish, and this is a fantastic combination. Just as an aside, leftover Thanksgiving turkey is delicious here, too….
The Brazilians add corn to things. We don’t usually add corn to our hot dogs, but they do…Yup, hot dogs. As well as, those yummy little potato sticks. So, this is different, but it is a wonderful version of chicken salad. It’s creamy, has a nice pure flavor, a little crunch at the end. It’s just flat-out delicious.
I was eating a dill pickle the other day, and thinking about potato salad. Who knows why? But, that was what I was doing. And the more this thought wandered aimlessly around my head, the more ideas came to me…this salad it the result of that wander.
Eggs, garden tomatoes, arugula and cloaked in a light mayonnaise sauce…what could be better to start off a meal? Or for lunch, with good bread? I was reminded of this bistro favorite, in an article in The New Yorker, and I’m so very glad it nudged my memory. This is a delicious way to kick off a summer meal, when the tomatoes are prime and the temperature peaks.
