What do you do when your fridge freezes everything in your crisper drawers?  You use those frozen cukes to make a nice, chilled cucumber soup!  It’s simple as can be…everything goes in the blender, whirl away and into the fridge for a couple of hours and you have lunch.  Or dinner.  Life is good! This little gem of a cake is perfect for breakfast or an afternoon tea (or coffee).  It’s moist, actually gets better as it sits, (though it is damn fine the first day, too!), isn’t too sweet, keeps well and is more or less, a one-bowl cake.  It is just plain lovely!  Continue reading →
