016Compound butter, which simply put, is butter with stuff added to it.  The great thing about them, is they can and should be made ahead, chilled and/or frozen, so you have them on hand.  The Goddess is all about having things on hand to work with and make her life easier.  These little nuggets of saucy goodness offer huge flavor and versatility.  It’s simplicity at its very best.  Continue reading →

Any proper tea will have lovely scones (rhymes with “cons”) which are similar to biscuits, but “shorter”.  This is a reference to texture, not stature.  When you hear the term “short”, it usually applies to non-yeast baked goods that have a high ratio of butter to flour.  They tend to be very rich, crumbly, and tender, and they tend toward crispness rather than chewy.   That describes these lovelies to a “tea”…   Continue reading →

047I said it yesterday and I’ll say it again today…Potato bread is special.  The basic dough makes a great loaf of simple and simply delicious white bread.  Or form the dough into dinner rolls…you know, the warm, light fluffy kind.  Think pillows of goodness to mop up gravy…Don’t you just love Sunday dinner?  Continue reading →

202Potato bread is special.  It’s wonderfully soft and chewy with a, wait for it, potato-y flavor!  How surprising, huh?  It makes great toast and is the perfect bread for BLT’s and ham sandwiches.  Don’t even get me started on egg salad sandwiches, which will be perfect for your leftover Easter eggs. Increasing the sugar by a few tablespoons and adding some currants to the dough and you’ll have…hot cross buns!  Continue reading →

The Goddess, not being of Irish descent, had not yet acquired a taste for Irish soda bread.  That is, she didn’t see the point of it, until she tried Anjelica Huston’s version.  Apparently, the Huston family lived in Ireland, while Anjelica was a mere slip of a lass and she grew up eating this bread every day with breakfast, lunch and dinner.  It is by far the best version I’ve had; it is absolutely delicious served warm, with good butter. Perfectly cooked lamb chops are a culinary wonder to be savored.  And the Rhubarb-Hibiscus Bourbon Sauce is a perfect union; they are a natural together.  The slight gaminess of the lamb, the lavender in the Herbes de Provence, the tartness of the rhubarb…this dish is Spring!  Continue reading →

Let’s Talk Flavors…Herbs?

The Unbound Reader, who married The Middle Son last year, wondered if I would talk about flavorings, flavor combinations that work together and what flavors work with which foods…confused?  Yeah, I have a tendency to do that sometimes, but let’s sort this out a bit.

Clearly, in order to experience the best flavors of anything, you need to start with a great cut of meat or perfectly ripe fruits or vegetables.  No amount of herbs or spices will fix any food past its prime.  But, on very good days, when the planets are all in alignment and you find the perfect, oh, let’s just say, the perfect winter squash, you will want that squash to sing when it hits the table, right?  What do you choose to enhance the sweetness, the texture, the flavor of our perfect squash?  All foods can be enhanced, their flavor boosted, by teasing out the very best parts of their flavors with salt and pepper, herbs and spices.  The key is understanding what works, how much and when to just use salt and pepper and nothing else.
