This is a “meal” soup. I fixed this for a special someone who had just driven for about nine hours. After that grueling ordeal, you don’t want something too heavy. You want comfort food. You don’t want to be stuffed, but you’re hungry. This soup is the perfect solution for that dilemma.
Flavored hummus seems to be all the rage these days. And with good reason. It’s very tasty stuff. Peas and mint are a natural combination. The lovely cool green just screams summer.
I was going to call this Autumn Hummus, but really, what does that tell you? Nada! The pumpkin and roasted peppers are there, but they are subtle. Not front flavors at all. And it’s very festive-looking.
Those hot summer nights, when you just can’t turn on the stove, this salad makes a terrific supper. But, don’t limit yourself, as this “salad” can be an appetizer, too. It’s simple and simply delicious.
