Ginger (Zingiber officinale) use dates back at least 5000 years.  You know the drill, Asia (it’s been used there for centuries), through the Middle East to Europe, then the Arab control of the spice trade, the trade routes open and spices become more available.  The history of spice does seem to repeat itself, doesn’t it?  Fortunately for us, ginger is readily available and in several forms…fresh, dried (in slices, pieces or more readily, ground), in syrup and crystalized.

It was drizzly, and rather chilly today…you may have heard…it’s Spring!  Soup seemed like the perfect antidote to not-so-perfect weather.  This soup has everything green and everything springtime in it.  It’s a flexible soup, too.  You can limit the mixture to 2 or 3 ingredients or expand it 5 or 6.  And if that’s not enough, there are also flavor or seasoning options.    Continue reading →

The winter is almost behind us and along with it, the soup pot on the back burner will disappear in favor of quicker, greener and cooler soups.  Before we retire the soup pot and since there’s still some snow on the ground, I thought we should have one last comforting bowl of the winter elixir, that is soup.  Continue reading →

202Potato bread is special.  It’s wonderfully soft and chewy with a, wait for it, potato-y flavor!  How surprising, huh?  It makes great toast and is the perfect bread for BLT’s and ham sandwiches.  Don’t even get me started on egg salad sandwiches, which will be perfect for your leftover Easter eggs. Increasing the sugar by a few tablespoons and adding some currants to the dough and you’ll have…hot cross buns!  Continue reading →

094Sound pretty ordinary, doesn’t it?  There’s nothing ordinary about this dish.  It’s simplicity itself, with huge flavor.  It’s a great dinner party dish, because it’s even better made ahead.  Continue reading →

Allspice…It’s a Berry

105This is Allspice.  Contrary to what many people think, Allspice is not a blend of spices.  From a taste standpoint, you can see where this myth comes from.  It is said to taste like a combination of cinnamon, cloves and nutmeg.  But use it on its own; let allspice carry the day added to some ground lamb or rub it into a pork shoulder, then slow-roast the meat and serve with a BBQ sauce that has…yeah, you guessed it…allspice in it!   Continue reading →

167Okay…it was late and I hadn’t really planned dinner.  The Latin Lover loves mac and cheese; he loves chili dogs…hmmm…what to make?  What to make?  And then it hit me like a pasta pot upside the head…why not combine the two?  Continue reading →

152Sicilians cook a bit differently than mainland Italians do.  Their cuisine is primarily a combination of Roman, Greek, Arab and Spanish settlement, with a smidge of French and German thrown in for fun.  At some point, they all held sway over Sicily.  We’re going to focus primarily on the Moors, who ruled Sicily for over 240 years;  their influence on the language and cuisine, was and is profound.  One of their major influences remains today, the cultivation and use of oranges and lemons.  The Moors also brought the cultivation of eggplants, dates, rice and sugar cane.  While the Romans brought wheat to Sicily, it was the Moors who promoted the production through superior irrigation.  This lead to the creation of portable dried pasta.  The Moors brought cinnamon, pistachios, almonds and desserts with honey.  This Stufato or stew, owes its flavors primarily to the Moors and with a smidge of the other conquering people tossed into the pot! I love eggplant parm.  I was peeling an eggplant to make it when I realized, that I really should have another one, but it’s cold and I didn’t want to go out to get another eggplant, so then The Goddess improvises.  In the way my mind works, or doesn’t, I thought SOUP!  Anyway, you may have heard that lately soup has been on my mind, so in the words of the late Mr. Spock,  “It is perfectly logical”.  I thought eggplant parmesan in soup-form might work.  I think it did.  Continue reading →

Pining for Rosemary

073Rosemary, ahh, I do love this herb.  It has spiky, rather substantial leaves, a heady, strong, complex aroma and flavor.  It’s great on lamb, pork, fish and game, rubbed into chicken or your Thanksgiving turkey or sprinkled over potatoes (or other root vegetables), that are then roasted to crispy perfection.  There’s something wintry about this herb, though I use it all year-long and prime rib, wouldn’t be as good as it can be, without rosemary.  Continue reading →
