This image has an empty alt attribute; its file name is img_3859.jpgI saw this on a Facebook page I follow.  It looked so delicious and we haven’t had chicken.  My version is based on a Jamie Oliver recipe, but I roamed pretty freely from his version.  You know, The Goddess is a born culinary wanderer.  Continue reading →

This isn’t exactly a chutney.  It’s really a cross between a chutney and a relish.  It’s sweet and sour.  It’s fruity, but with a hit of savory because of the Worcestershire and vinegar.  You know, it really doesn’t matter what we call it.  What matters is that it’s delicious!  Continue reading →

Last fall we visited the Iberian peninsula.  If you haven’t been to either Spain or Portugal, it should definitely be on your list, and soon.  The food there is so delicious.  The flavors so bright and un-muddy.  This is what inspired this chicken.  It took me back to Sevilla.  Continue reading →

I don’t know about you, but The Latin Lover and The Goddess seem to like to begin their weekend with pizza.  Sure, we can get take-out.  It’s good.  Sometimes it’s even great pizza, but you can make your own and it isn’t that difficult.  Really.  It isn’t.  Continue reading →

Meatloaf, Cuban-StyleYou may remember, in the past…yes, The Goddess is a deity with a past!  Everyone has a past, and goddess-willing, it’s interesting and rich with memories.  Anyway, there were a couple of posts for Boliche and Boliche, Deconstructed, as well as picadillo.  This is simply boliche in meatloaf form.  An experiment going deliciously well!  Continue reading →

Pork with Salsa Verde - Plan BAs you can see, there isn’t too much that’s green about this sauce, except the cilantro in the “red onion salsa”.  There was a plan, but then I browned the meat, and it left behind a great fond, so what’s a Goddess to do?  She goes to plan B, of course.  And this is Plan B…Pork with Sweet Potatoes and Green Chiles!  Continue reading →

This is one of those totally self-indulgent dishes…well, self-indulgent for me.  I love fried rice.  White rice you can keep, except to act as a nice fluffy, feather bed to be blanketed with a great sauce.  This is a version of an after-work meal that I dream of.  It’s the sole reason The Goddess makes extra rice.  Continue reading →

Yes, the garden tomatoes have arrived!  Aren’t they absolutely delicious?  This is the time of year to indulge in their glory.  Make BLT’s, tomato-avocado sandwiches and just plain tomato sandwiches with a schmear of good mayo…excuse while I step out for a cigarette!    Continue reading →

First of all, isn’t this just fun to say?  This is a popular North African and Middle Eastern concoction with huge flavor.  Not surprisingly, people unfamiliar with this, still love it.  It’s versatile, quick to prepare, soul-warming and delicious.  Continue reading →

Pining for Rosemary

073Rosemary, ahh, I do love this herb.  It has spiky, rather substantial leaves, a heady, strong, complex aroma and flavor.  It’s great on lamb, pork, fish and game, rubbed into chicken or your Thanksgiving turkey or sprinkled over potatoes (or other root vegetables), that are then roasted to crispy perfection.  There’s something wintry about this herb, though I use it all year-long and prime rib, wouldn’t be as good as it can be, without rosemary.  Continue reading →
