Most people I know enjoy scalloped potatoes, or pommes au gratin.  They are creamy, cheesy and a great company dish.  Sometimes, The Goddess, thinks less, is more.  She want to really taste the potatoes, cut the richness (steak or duck doesn’t really need extra richness, do they?) and still have a comforting, delicious, make-ahead side dish…this is the solution. Spice Island Chicken with Sweet Potatoes, Onions and Nectarines

As you know, The Goddess loves fruit with savory things.  The spices are the “warm” spices—allspice, coriander, smoked paprika.  And nectarines.  There isn’t much that’s better than a juicy, ripe nectarine, eaten out of hand, with the juices running down your chin.  God, I need a cigarette, just thinking about it.  This dish combines the sweetness of nectarines, sweet potatoes and juicy chicken thighs seasoned with those “warm” spices, all in one pan.    Continue reading →

Roasted Sweet Potatoes, Onions and Pineapple with RumSweet potatoes are just as good in summer as they are for Thanksgiving.  Maybe they’re even better in the summer.  You can put this mixture on the grill, wrapped in foil.  This works as a perfect bed for Jerked Chicken.  All the flavors play off of each other…perfect cacophony of flavor.  Continue reading →
