033My New Year gift to you is this recipe for pancakes.  You will never use a pancake mix again.  This is just too easy and simple to prepare.  It doubles and triples easily and no matter what, it makes light, fluffy, meltingly tender pancakes to slather in maple syrup.  As the aroma wafts through you house, sleepy heads (and hungover heads) will rise and shine.  Continue reading →

015Mashed potatoes are comfort.  They are smooth, creamy and soft.  They are the perfect foil for gravy.  They are perfect baby food and potatoes have a good amount of both potassium and vitamin C.  Health and comfort…does it get much better than that?  It does, because these mashed potatoes don’t have any added fat in them…these are guiltless.    Continue reading →

135This hot cereal, cream of wheat to be exact, is a reason to get up on a cold winter morning.  It’s better than sugar plums dancing in your head.  It’s thick, rich and creamy, it sticks with you through all that snow shoveling, skating or skiing.  And best of all, it’s just plain delicious.  It’s a great cereal for babies, too.  Continue reading →

322Blanching, or pre-cooking, vegetables keeps their color and nutrients stable.  Plus, they are half-cooked, so finishing them for dinner, takes moments.  There they are, in your fridge, just waiting for some hot olive oil, sliced garlic and a few red pepper flakes.  They are fine specimens indeed.  Continue reading →
