This is a summer salad.  Yes, it can be made anytime of the year, but when the cucumbers and tomatoes are in season, it’s spectacular.  It’s a nice picnic or BBQ side, too.  And as always, it’s very flexible.  But, no matter what options you choose, it’s delicious.  Continue reading →

This is summer…or in this case, late spring, on a plate.  It’s perfect for lunch or dinner, and can go main course by adding some shrimp or tuna.  Use whatever beans you have in your cupboard, but garbanzo or kidney are my favorite for this salad. Continue reading →

Saffron Scented Chicken Curry with Chickpeas in Coconut Cream SauceThough The Goddess tends toward being heavy-handed with garnishes on curry, this chicken curry has a very subtle curry flavor.  The flavors intermingle and literally “bounce” around your palate, but the “curry flavor” is a back flavor.  And, this curry is fast enough for a mid-week family meal and tasty enough for company.  Either way, it’s delicious.  Continue reading →

Mediterranean Bean, Sausage & Kale SouppaThe Tuscans have their Ribollita.  The Galicians have their Caldo Gallego.  The Lisbonites have their Caldo Verde.  And we, have this “Souppa”.  Most cultures have some similar soup, a simple, nutritious, inexpensive and delicious soup or stew, using what’s on hand.
