141Okay, these aren’t necessarily “baked” beans.  They can be, if that’s what you want to do and you have the time.  Otherwise, make this “quick and dirty” version in about 20 minutes.  They have tons of flavor and if you toss some cut-up hot dogs into the mix, cook some rice, add a tossed salad or green veggie, you can have dinner on the table in under 30 minutes.  Continue reading →

079Gazpacho is the perfect summer soup.  In Andalusia, it’s smooth, unctuous and creamy.  The Goddess loves that version.  She could bathe in that version.  But, she’s also just a tad unconventional, so she also really likes a slightly chunkier version with bits of crunchy vegetables, too.  That’s what this is!  Continue reading →

242It’s Garlic Scape Season!!!  The Goddess loves, loves, loves these little curlicues from heaven that are in season right now, for the next 2-3 weeks.  Scapes, as they are usually simply referred to, are the flower bud and its stem the garlic bulb produces in late spring.  They are removed so the bulb will grow larger for fall harvest.  There’s something about their delicate swan-like necks that culicue around each other…it’s magical, I tell you.  Continue reading →

This week I’ve been pan-frying things, with coffee on my mind!  Here in the Northeast, we appear to be in full summer.  You know, after our 15 minutes of Spring, and I finally gave in and kicked on the A/C…A/C is a is probably one of the greatest inventions of our time.  It’s a big thing with The Goddess.  However, being the Northeast, we may still have a killing frost; one never knows.  I tell you, The Goddess loves living on the edge!  Anyway, pan-frying is just a good thing to know how to do and do well.  It’s pretty much all about a heavy pan and heat control.  Continue reading →

Orange-Mint ChimichurriChimichurri is to Argentina what pesto is to southern Italy.  I mean it is really about the same thing.  Chimichurri, (and isn’t that just fun to say?) is usually chopped herbs, languishing in a lovely pool of good olive oil, rather than the more emulsified pesto.  This is a drizzle sauce….  Continue reading →
