Quick and Easy Tuna MeltI’ve always liked the idea of tuna melts.  I really do, but you know, sometimes when you heat canned tuna, it develops an unpleasant fishy taste.  The Goddess hates fishy.  The Latin Lover hates fishy.  But, I’m happy to tell you, this works well.  It’s quick to fix and doesn’t heat up the kitchen, when the temperature outside soars…and it’s delicious.  Continue reading →

Mojo Verde (Green Sauce)This is similar to The Goddess’s Green Goddess, in that it’s creamy and green!  The herbs are entirely different, so the flavor is different.  But, delicious?  Oh, yeah.  This is terrific to dress a potato or pasta salad, smear on a chicken sandwich and it is wonderful on a nice green salad with bacon bits.  But, The Goddess loves, loves, loves to dip roasted baby potatoes into this fine elixir…heaven!  Pure heaven! The Goddess's Dilly Ranch Salad Dressing and DipAre we tired of Ranch Dressing yet?  Come on…you know we all love it.  Don’t we?  I’ve made Ranch for years, many times using the dry packet and embellishing it with more dill.  The Goddess loves her dill.  So why not make it from scratch?  This is where we’ve ended up…for the moment, anyway.  It’s terrific drizzled over a nice piece of salmon, on a baked potato, a shingle or on slices of garden tomatoes.  Continue reading →

Creamy Russian DressingRussian dressing?  No.  This is really more of a spread or dip.  It’s this creamy version that absolutely makes a perfect Reuben sandwich.  I love Reuben sandwiches.  I think they are my favorite grilled sandwich and largely it’s because of a good, thick schmear of this little bit of heaven.  This is pretty decent on a burger and it absolutely makes a roast beef sandwich.  Oh, yeah…you can actually dress a salad, with it too! Hint-of-Curry Chicken Salad with Cilantro and Toasted PecansI love chicken salad.  And I imagine you are pretty sick and tired of hearing about what The Goddess loves, as it seems to be everything, doesn’t it?  What can I say?  She’s an open-minded eater and a culinary adventurer.  Damn, that sounds much better than reality, because she’s pretty much willing to try anything at least once.  But, chicken salad is a never-to-be-passed-up dish, and this is a fantastic combination.   Just as an aside, leftover Thanksgiving turkey is delicious here, too….
