Neptune’s Shepherd’s Pie

I was going to call this fish pie, but that seemed misleading; there’s no crust.  And when most people hear “pie” they expect crust.  But most everyone knows that shepherd’s pie is a mixture of meat (in this case, fish) and vegetables topped with mashed potatoes.  And most everyone knows that Neptune was the Roman God of the Sea…hence, Neptune’s Shepherd’s Pie seemed more accurate.  Continue reading →

Stuffed Tuscan Chicken Quarters with Mushroom-Shallot Wine Sauce, Tuscan White Beans and Sautéd ZucchiniThis is a lovely entrée for family or a dinner party.  I’ve haven’t done this in years and decided it was thyme…er…time.  The thigh-drumstick combo can be stuffed with a bread stuffing, but I’m using ground chicken with herbs and other good things.  Continue reading →

The recipe title is quite a mouth-full, isn’t it?  We enjoyed this wonderful dish, at a dinner party in Puerto Rico, over 25 years ago.  From the first bite, I was completely smitten with the flavor and the texture.  It was creamy, salty, all gooey with cheese and truly delicious.  It was about the best fish I had ever eaten.  The hostess told me she would gladly give me the recipe. I don’t think she wanted to share the recipe, but I was bulldog-tenacious and wouldn’t give up.  I begged and begged her for months, until we were down to pretty much the day before we were leaving the island, when she finally relented.  Sometimes Goddess’s have to be persistent.  Continue reading →

192This is Venice, in all her glory.  She’s old and she’s beautiful.  Venice is a model of early engineering…well engineering, period.  This is man-made, and the beginnings of Venice date back to about the 5th century!  Isn’t that just astounding?  And the food is pretty astounding, too.  Venetian Chicken (implying this is the only way one would prepare chicken in Venice!) has all of the best aspects of Venetian cuisine, but with a twist!   Continue reading →

The winter is almost behind us and along with it, the soup pot on the back burner will disappear in favor of quicker, greener and cooler soups.  Before we retire the soup pot and since there’s still some snow on the ground, I thought we should have one last comforting bowl of the winter elixir, that is soup.  Continue reading →

179Thomas Jefferson (or “Tee-Jay”, his lesser known rapper name), from his travels in Europe, brought the Colonies the lovely flavor of tarragon. He was a Francophile in the largest sense; if it was French, it was good…and tarragon is very good, indeed.

020This is not-your-mother’s-chicken soup, but a Coq au Vin-ish type of soup; it’s rustic, earthy comfort food at it’s best and easiest.  It takes about 30 minutes to make and with some minor changes, this can become a stew.  How flexible is that?  Continue reading →

Mother's Pot Roasted PerfectionFor us, pot roast is winter.  It offers such a bang-for-your-buck flavor-wise, with its warm, rich flavor, its rib-sticking meatiness and it’s just so simple to prepare.  It is truly the perfect Sunday dinner, on a cold winters day.  And not to be forgotten, the house smells fantastic and you can spend the afternoon doing a jigsaw puzzle.   Continue reading →
