Self-Indulgent Fried Rice

This is one of those totally self-indulgent dishes…well, self-indulgent for me.  I love fried rice.  White rice you can keep, except to act as a nice fluffy, feather bed to be blanketed with a great sauce.  This is a version of an after-work meal that I dream of.  It’s the sole reason The Goddess makes extra rice.  Continue reading →

Sweet Mustard Summer Slaw, Libbey's Hunter Sauasage Grilled, Grilled Potato SaladThe Youngest One brought some homemade sausage from Vermont and that just says, “Grill, baby, grill”!  Potato salad seemed like a good idea and since the grill was going anyway, why not grill the potatoes?  And the onions, too?  Turns out, that was my one good idea for the day! The recipe title is quite a mouth-full, isn’t it?  We enjoyed this wonderful dish, at a dinner party in Puerto Rico, over 25 years ago.  From the first bite, I was completely smitten with the flavor and the texture.  It was creamy, salty, all gooey with cheese and truly delicious.  It was about the best fish I had ever eaten.  The hostess told me she would gladly give me the recipe. I don’t think she wanted to share the recipe, but I was bulldog-tenacious and wouldn’t give up.  I begged and begged her for months, until we were down to pretty much the day before we were leaving the island, when she finally relented.  Sometimes Goddess’s have to be persistent.  Continue reading →

This week I’ve been pan-frying things, with coffee on my mind!  Here in the Northeast, we appear to be in full summer.  You know, after our 15 minutes of Spring, and I finally gave in and kicked on the A/C…A/C is a is probably one of the greatest inventions of our time.  It’s a big thing with The Goddess.  However, being the Northeast, we may still have a killing frost; one never knows.  I tell you, The Goddess loves living on the edge!  Anyway, pan-frying is just a good thing to know how to do and do well.  It’s pretty much all about a heavy pan and heat control.  Continue reading →
