Sea Legs & Sweet Pea Salad with Lemon-Yogurt DressingThis is a summer salad if there ever was one.  It’s perfect when the temperature soars, as it’s been doing here in the Carolinas, so this seems like the perfect dinner, giving me a delicious, quick, cold meal loaded with flavor, giving me just that little extra time I need to unpack more boxes…Yippee!!!  Continue reading →

Steak with Bleu Cheese ButterYou know, The Goddess has mentioned now and then how much she enjoys condiments…Okay, she tends to go on bit about them.  And with good reason.  Compound or flavored butters are condiments, too.  And this is one of the best.  Continue reading →

Goddess of the Sea CakesI really do so enjoy imitation crab meat.  I know it’s not crab meat.  I just like it.  It’s never fishy when it’s heated.  It has a nice consistency, it’s easy to work with and it just tastes so good.  And it was really good in these patties.  Continue reading →

Mango-Cabbage Slaw with Sweet Chile VinaigretteThis is a nice, fruity and lighter version of cole slaw.  In summer, I like to add mango, pineapple, peaches, or nectarines to cole slaw.  I dress this version with a sweet chile vinaigrette, which compliments the fruit just ever-so nicely.  It’s summery.  Continue reading →

Dry Rubbed, Slow-Roasted Not-Adam's-RibsIt’s time to fess up.  I do love ribs.  The Goddess likes to gnaw on bones…it’s a thing.  And she prefers her ribs to be slow-roasted in the oven, not on the grill.  You knew she was unorthodox, but the ribs don’t dry out in the oven.  You can control the moisture and well, they’re just better.  And dry rub is the secret to great ribs. 017Very, very thinly sliced fresh fennel makes a wonderful salad.  It’s slightly crunchy, but not too toothsome, the citrus compliments the fennel perfectly.  The rhubarb was a nice slightly sweet, and slightly sour, too.  Balance, baby, balance.  Continue reading →

Roasted Sweet Potatoes with Pecans, Apricots and ParmesanThis is particularly delicious with fish, seafood or pork.  The thing I like about this, is that even though it’s nice Thanksgiving side dish, it’s wonderful when fresh apricots are in season.  It’s quick, easy and totally delicious.  Continue reading →

Thai-Flavored Turbot with Charred OnionsThis is a wonderful dish.  The onions are just slightly charred, a tad burned, if you will.  Turbot is a wonderful fish.  It’s just slightly meaty and a bit on the sweet side.  It lends itself well to sauces, and this lemongrass-laced sauce is perfect with it.  Continue reading →

North Carolina-Style, Smoky Mustard BBQ SauceWe just finished exploring the Art Fair in Boca Raton, and we were hungry.  So we checked out “BBQ near me”—isn’t technology great?  Anyway, less than a mile away was “Mississippi Sweets BBQ Co”.  Thanks, Siri…what a find.  Continue reading →
