Tuna-Caper Mousse on Toast with Avocado SlicesThis is a great little appetizer to whip up at a moment’s notice.  Smear it on a bland, buttery cracker, and you think it’s perfect.  But stuffed into one of the little sweet-hot round peppers that you can find on the olive bar…you know the ones, it’s stupendous.  Continue reading →

May at White Flower FarmsWhite Flower Farm near Litchfield, CT, had their Tomato Event.  It was a beautiful day, spent communing with nature and the truly beautiful, The Orchid Mother.  They offered lunch and other goodies, so we dined al fresco on Fried Green Tomato Tacos.  The tomato jam was one of the “other” goodies.  Continue reading →

Spicy Sichuan Roasted PotatoesWe ate at “Shu” in West Hartford, CT last week.  It was mind-blowingly delicious and nary a fortune cookie in sight.  This is real Sichuan cooking.  No gloppy sauces, just complex flavors and heat.  They like to use a good amount of chiles and Sichuan (Szechuan or Szechwan) peppercorns, which works for me!  Continue reading →

First, let’s get something straight.  The Goddess loves chicken salad.  She’s never met one she didn’t like, except for that one with chocolate chips in it.  It turns out that chocolate doesn’t make everything taste better!  Continue reading →

Salmon & Tuna TartareThis is a terrific lunch or first course.  I serve it as is, or smeared on crackers or toasts.  It’s delicious, light, and has a lovely texture; sort of silky on the tongue.  If you like sushi, you’ll love this mixture.  Continue reading →

Heavenly Beer-Braised Onions with a Dusting of Kosher SaltThe Goddess loves onions (and all of the lily family, including the flowers!).  She uses them with complete abandon.  A hamburger is not to be eaten without onion.  Several thin slices of raw red or Vidalia onion,  is hamburger heaven for her and The Spicy Honey.  Continue reading →

I just ran across a recipe for Chicken Mole Casserole on the Food & Wine website.  And I do mean I “just” found it.  It sounded great; I liked the idea of it.  It just seemed like the perfect thing for dinner, so I made it, or rather my version of it. And it was on the table in 20 minutes!  What a great weeknight or Friday-night-after-work-instead-of-pizza dinner!  Continue reading →

Risoles (risole is the singular) are one of our best food memories from out time in Brazil.  That’s saying something, because there was no shortage of spectacularly good food.  Risoles are a form of croquette.  They are deep-fried, crispy little bites of heaven.   Or about 2-3 bites, usually with a creamy filling; shrimp, hearts of palm, cheese, etc.  But they are the stuff of dreams.  Continue reading →

Roasted Butternut, Brie and Caramelized Onions en CrouteThis came about because there’s a great sandwich at The Kitchen, which is in the lobby of the Hartford Public Library.  It’s part of Billings Forge Community Works and indeed, they do good great things with the community.  Please check out their website.  But, The Kitchen is a bright and lovely place to grab a bite for lunch.  They have some great offerings, but, “The-Butter-Me-Up” grilled sandwich is what inspired this “croute”.  Continue reading →
