The mixture of onions, apples and mushrooms is a winning combination. I love this combination with pork or roasted chicken. This is particularly nice, because you can make it ahead and reheat it. When I made this there was a hurricane brewing out there in the Atlantic. And it hit North Carolina. It hit hard near the coast. Sadly, there are far too many people who suffered terrible loss at the hands of Mother Nature and will continue to deal with the devastation left in the wake of Flo. We were very fortunate that Flo changed her mind and lost some steam by the time she arrived inland. But, life goes on and you have to keep up your strength to brave the elements and repair the damage done.
The other day is was lunching at a local restaurant, and their daily special was a pork schnitzel sandwich, topped with their applesauce aïoli. It was really quite a lovely combination, so I decided it was time to explore the rich deliciousness, that is an aïoli. And then there’s the alliteration thing, Applesauce-Allspice Aïoli. What can I say?
I love fennel. I love it raw, but when it’s roasted or sautéed…mmm…it’s just superb. So many times I’ve heard people say they don’t know what to do with fresh fennel. This is a perfect marriage…fennel and apple. There’s no fighting here!
Anyone you knows The Goddess, knows that her refrigerator is always bursting at the seams. The reason? One word…condiments. Condiments and sauces are where it’s at. It’s such a luxury to have jars of sauces, relishes or chutney tucked away, just waiting to be smeared on crackers, or added to a grilled cheese. Or serve alongside your Thanksgiving turkey, which is a nice change from, or in addition to, cranberry relish.
The Goddess has come to the conclusion that autumn is her favorite time of the year, certainly from a culinary standpoint. You know, the things that are just so delicious—apples, pears, Brussels sprouts, winter squash are in abundance. Not to mention soups and stews. Yup! It is a great time of year to be cooking…and eating.
This is a simple, rustic dessert. Comfort food. It has a good apple flavor, held together by a cakey pudding. Sort of a cross between apple pie and cake-like pudding. Pure comfort.
The Goddess is in apple pie mode these days. She likes to reduce apple cider to add to the apples to really give an apple-y blast! She’s very explosive, you know! This vinaigrette was born from that reduction.
With autumn upon us, and all those lovely apples and apple cider, I decided to slightly rethink my apple pie. The roots are the same as the Spiced Caramel Apple Pie, with all the warm spices, but I decided I wanted to “punch” up the apple taste to help create another little slice of heaven.
Applesauce is delicious. This is better. My sister is the creator of this. Years ago, she made this for The Progeny. They loved it. They still do. I used to make huge amounts of this and can it in quart jars. The Eldest One used to eat it by the quart, quite literally.
