Vegetable Soup with Italian FlavorsWith flu season upon us with a vengeance, I thought this was a good time of year to make a brothy, vegetable soup.  There are a few beans tossed in, but they were more of an afterthought.  This soup is all about vegetables, is slightly salty and will warm you to your bones.  Continue reading →

Onions, Apple and Mushroom Compote (for Pork)The mixture of onions, apples and mushrooms is a winning combination.  I love this combination with pork or roasted chicken.  This is particularly nice, because you can make it ahead and reheat it.  I think it’s even better reheated, making it perfect for company.  And, this compote positively screams autumn!  Continue reading →

Pork with Mushrooms, Herbs and ApplesWhen I made this there was a hurricane brewing out there in the Atlantic.  And it hit North Carolina.  It hit hard near the coast.  Sadly, there are far too many people who suffered terrible loss at the hands of Mother Nature and will continue to deal with the devastation left in the wake of Flo.  We were very fortunate that Flo changed her mind and lost some steam by the time she arrived inland.  But, life goes on and you have to keep up your strength to brave the elements and repair the damage done.  Continue reading →

Salisbury Steak with Mushroom, Onion and Caper SauceSalisbury Steak is just a lovely way of saying that we’re looking at a thick hamburger “steak” with gravy.  And I’m all over that.  I hate those thick burgers, that in order to eat them you have to unhinge your jaw, like a python.  I always eat those types of burgers with a knife and fork anyway, so why not add some terrific gravy?  Continue reading →

Heavenly Stuffed PumpkinEvery now and again, we have a vegetarian at our holiday table.  There are always plenty of side dishes that will work for them, but I think vegetarians should be able to experience a filling and delicious main course.  Just to be clear, non-vegetarians gobble this up, too!  Yeah, I went for the Thanksgiving pun…get over it!   Continue reading →
