This is one of those totally self-indulgent dishes…well, self-indulgent for me.  I love fried rice.  White rice you can keep, except to act as a nice fluffy, feather bed to be blanketed with a great sauce.  This is a version of an after-work meal that I dream of.  It’s the sole reason The Goddess makes extra rice.  Continue reading →

Rice is a cereal grain; there are white, brown, black, red and purple varieties of rice.  Rice offers a wonderful backdrop for other flavors, because it is has such a neutral flavor.  Combined with legumes, it becomes a vegetarian  protein.  It is low in fat and offers a good deal of Vitamin B, potassium, and phosphorus, as well as some fiber, which is all great…but how do I cook perfect rice? The recipe title is quite a mouth-full, isn’t it?  We enjoyed this wonderful dish, at a dinner party in Puerto Rico, over 25 years ago.  From the first bite, I was completely smitten with the flavor and the texture.  It was creamy, salty, all gooey with cheese and truly delicious.  It was about the best fish I had ever eaten.  The hostess told me she would gladly give me the recipe. I don’t think she wanted to share the recipe, but I was bulldog-tenacious and wouldn’t give up.  I begged and begged her for months, until we were down to pretty much the day before we were leaving the island, when she finally relented.  Sometimes Goddess’s have to be persistent.  Continue reading →

028The key to really good tuna, is to purchase the freshest tuna you can and then, not over-cooking them.  They should be red in the very center and pink at the very least, with no more than 1/4-inch edge of doneness, less if possible.  The truly wonderful part of all this is, tuna steaks can be cooked and on the table in less than 10 minutes!  Continue reading →
