Kale Sautéed with StrawberriesI purchased some lacinato kale the other day.  I know.  I know.  I’ve ranted about how tired I am of kale in everything, but chocolate pudding.  And I am tired of it, but I’m a puzzle.  Okay?  I do enjoy sautéed greens every now and then.  Continue reading →

Marinated Eggplant Fans Fans are so summery, aren’t they?  And eggplant fans, well, what can I say? I can make an entire meal on eggplant alone.  They’re so meaty, it picks up flavors like the little sponges that it is…and are, well, just delicious.  It was a Marcus Samuelsson recipe that got me thinking about this.   Continue reading →

Mango-Cabbage Slaw with Sweet Chile VinaigretteThis is a nice, fruity and lighter version of cole slaw.  In summer, I like to add mango, pineapple, peaches, or nectarines to cole slaw.  I dress this version with a sweet chile vinaigrette, which compliments the fruit just ever-so nicely.  It’s summery.  Continue reading →

Thai-Flavored Turbot with Charred OnionsThis is a wonderful dish.  The onions are just slightly charred, a tad burned, if you will.  Turbot is a wonderful fish.  It’s just slightly meaty and a bit on the sweet side.  It lends itself well to sauces, and this lemongrass-laced sauce is perfect with it.  Continue reading →

Guava-Onion-Rum SauceThis is one of those sauces that is as good with pork, as it is with chicken and it’s equally delicious with salmon or shrimp.  Okay…so it’s good on pretty much anything.  I haven’t tried it on a burger, but I think on a pork burger it could be stupendous. Continue reading →

Quick, Pan-Fried General Tso's ChickenThe Eldest Progeny loves General Tso’s.  Make no mistake here…we all love it.  But, he can be pretty passionate about it.  It’s sort of a benchmark for him, when he considers the quality of a Chinese restaurant.  We’ll see what he thinks about this version, which isn’t deep-fried and is a bit lighter, but loaded with flavor.
