Broccoli-Apple Slaw with Cranberries and a Creamy Citrus DressingI picked up a bag of broccoli slaw, when the store was out of regular slaw.  I’m so glad I did.  I love the stuff, but The Goddess has never met a piece of broccoli she didn’t love.  There must be a little Italian blood in her veins, rather than the rumored ice water.  Continue reading →

Cuban Frita with Shoestrings and Salsa CremosaThat’s right…those Cubans even have their own version of a burger…the Frita.  This is a burger made with pork or a combination of beef and pork, seasoned, fried, placed on a bun, drizzled with a creamy sauce and shoestring potato sticks all over the top.  I’ll just let you think about that for a moment…. Salsa CremosaThis is my version of “special sauce”.  It’s great on burgers, steamed or roasted veggies, potatoes (yeah, I know they are veggies, too), roast beef and Reuben sandwiches, too.  It’s a great dip, too. Continue reading →

First, let’s get something straight.  The Goddess loves chicken salad.  She’s never met one she didn’t like, except for that one with chocolate chips in it.  It turns out that chocolate doesn’t make everything taste better!  Continue reading →

I mentioned yesterday that The Youngest One brought some Hunter’s Sausage from Vermont.  I made Grilled Potato Salad, and grilled cauliflower, but he loves cole slaw.  He is particularly fond of the Sweet Mustard Summer Slaw, I’ve been making over the…wait for it…SUMMER!  Continue reading →

Sweet Mustard Summer Slaw, Libbey's Hunter Sauasage Grilled, Grilled Potato SaladThe Youngest One brought some homemade sausage from Vermont and that just says, “Grill, baby, grill”!  Potato salad seemed like a good idea and since the grill was going anyway, why not grill the potatoes?  And the onions, too?  Turns out, that was my one good idea for the day! 038Slow-roasted, brown sugar-crusted corned beef with beer and onion gravy.  Why would you save this just for St. Patrick’s Day?  It’s much too good and so simple to be left to one day a year.  It makes a great Sunday dinner and the house will smell good enough to eat!  Continue reading →

141Okay, these aren’t necessarily “baked” beans.  They can be, if that’s what you want to do and you have the time.  Otherwise, make this “quick and dirty” version in about 20 minutes.  They have tons of flavor and if you toss some cut-up hot dogs into the mix, cook some rice, add a tossed salad or green veggie, you can have dinner on the table in under 30 minutes.  Continue reading →

My father loved potato salad.  More importantly, he loved my mother’s potato salad.  This is the way she made potato salad and she made it well.  This is the way she taught me to make potato salad.  There’s not much better with a hot dog, and yes, Virginia, that’s ketchup on the hot dog…get over it!  Continue reading →
