I love the idea of eggplant parmesan.  But, the problem for me has always been the breading.  It’s just too much.  It overpowers the flavor of the eggplant and I like that flavor.  So when I saw Grilled Eggplant Parmesan on the Food & Wine website, my light bulb lit right up!  Continue reading →

Spicy Mussel Chowder with Fennel and Orange Zest

We traveled North for the holidays.  it’s a bit chillier there than in the Carolinas, but decidedly more Christmas-y.  This soup/chowder came about through the wonderful duo, Dave and Terri!  They always come up with delicious fare and this was truly an inspiring way to ring in the New Year.  Continue reading →
